Thai Basil Pesto

Hi, Everyone!

Grandma and I decided to make pesto out of the  Thai basil Grandma grows.  Thai basil doesn’t smell or taste quite like regular basil, so we needed to find special ingredients to go with the special taste.  Grandma took me to F. Oliver’s oil and vinegar shop in Canandaigua so we could find just the right kind of oil to use.  The owner, Penny Pankow, was very friendly and helped me pick toasted walnut oil.

Then we stopped at Wegman’s to buy walnuts and goat cheese.  Grandma said those nuts and cheese would work better than pine nuts and Parmesan for this kind of basil pesto.  I made sure the walnuts were toasted just right!

Then I harvested the Thai basil from the herb garden.  It smells really good!  I helped Grandma measure the Thai basil leaves, so we knew how much of the other ingredients to use.  I made sure everything was measured right, then Grandma let me pulse the food processor.

When we tasted the pesto, we didn’t really taste the anise flavor of the Thai basil, so Grandma let me put in a secret ingredient.  I won’t tell what it is, but it’s from Fairfield California.  We mixed that in, then let the flavors blend for a while.  When it was ready, we let Grandpa to try it.  He thinks it will taste very good on salmon.
