Hi, everyone!
We’ve had enough warm days now that it really, truly, absolutely is spring! There are lots of daffodils blooming around Grandma and Grandpa’s house and the trees leafed out just in time for Easter!
We usually go to Joe-san and Nancy-san’s house to have Easter dinner with them and Moose-san and Tilly. This year Joe-san was going to do the cooking, because Nancy-san’s broken arm hasn’t completely healed. Then Joe-san caught his hand in his car door and broke his finger! Grandpa has a brace on his hand right now to help his thumb joint, so Grandma and I are the only two people with two working hands / paws! Grandma said we should definitely do the cooking and have Easter dinner here! Joe-san and Nancy-san had already bought a lamb roast, so Grandma and I looked for recipes to serve with lamb.
On Friday, we made goat cheese and rosemary biscuits. I helped with the mixing and the rolling. Don’t they look yummy? We froze them so they would be fresh for Easter dinner.
Then on Saturday, Grandma and Grandpa and I made a fancy potato casserole. Grandpa did the mandolin slicing to make sure that Grandma and I still had two working hands / paws with no cuts! Then Grandma and I made the layers of potatoes, cheese and broth. It took longer for the potatoes to bake than the recipe said, but we had another yummy looking dish when we were done! Then I helped Grandma make bearnaise sauce to go with the asparagus we planned to roast.
We did so much food preparation in advance that I had time to spend outside on Easter afternoon looking at all the green buds and flowers before Joe-san and Nancy-san and Moose-san and Tilly came! There was green to see everywhere! The apple trees all have green leaves sprouting on the branches that weren’t pruned. One of the apple trees had some pine branches stuck in it from the windstorms. Grandma said maybe it was going to have pine apples on it this year!
When Joe-san and Nancy-san came, they came in Joe-san’s new red car! It’s even redder than his old car! Moose-san and Tilly like it a lot! The weather was so nice that we had appetizers on the back deck before we went back inside! Grandma cut a bouquet of daffodils to put on the table.
Moose-san and Tilly always check out the apple pie before dinner to make sure Grandma baked it properly. Then we had dinner! After dinner, Moose-san was in charge of serving the apple pie. I made sure he cut pieces the right size for everybody and Tilly served the ice cream. We make a good team!
After dinner, we all watched some cooking shows on TV. One of them featured the ramen chef who is friends with Uncle David! I was excited when they showed the restaurant where we met him in Japan!
Every day now it is getting greener and greener! This is a very pretty time of year in Rochester — it fits the Easter message of renewed life very well!
Love,
Lion-san
What a delicious looking Easter dinner! Just looking at the photos is making me drool!
Everything sounds yummy that you had for Easter dinner. Was the main course ham or what? I just bought a mandolin but haven’t taken it out of the box yet. I’ll be careful of the sharp blades. Happy Spring to you and all the family, Lion-san. Great Aunt Betsy
I reread your post and see that you had lamb for your main course for Easter, Lion-san.
We had a great time on Easter! The lamb was cooked perfectly and Nancy-san has even had lamb sandwiches and we’ll still have enough for a dinner. The potatoes were really good too. And the apple pie was really good and all gone already.
La Vache’s favorite part is the Bearnaise sauce!
So glad a little lion “gets” it.
Poor Nancy and Joe.
LV also loves that red car!
